Happy Hour - Mint Julep
The Kentucky Derby is coming up next weekend. I don't follow horse racing, I just learned this from general chatter on the internet. Two years ago, we drove down to Nashville via Kentucky and happened to be in Lexington on the weekend of the Rolex Kentucky horse racing event. We just managed to find a hotel room - the town was packed! We had a fabulous time and returned the following year for Matt's birthday. On the way home from Nashville, we'd planned to stop in Louisville, Kentucky for lunch but we stopped at a visitor's centre on the highway and learned it was now Derby weekend and we should avoid the area at all costs! So much for my thorough planning.
Kentucky is where we fell in love with bourbon. Since we just bought a new house, we're not travelling this spring, so I thought I'd take a trip back to Kentucky through cocktails!

Tart of the Month - Strawberry Rhubarb Galettes
I think I finally discovered the key to loving rhubarb. It seems so obvious, but mixing it with strawberries makes all the difference! Strawberry and rhubarb go so wonderfully together. The tartness of the rhubarb is a great compliment to the sweet berries.
These galettes are very easy. A galette is a free-form tart, and making these with frozen puff pastry mean you can whip them up in minutes.

Rhubarb-Cherry Sauce for Pork Chops
Rhubarb... I just don't know.
We signed up for our CSA (Community Supported Agriculture) box again this year. We loved it so much last year and we ate everything, except the rhubarb. This year I was determined to try to use it up so I thought I'd make this sauce to accompany pork.

Spring Pasta with Peas and Fresh Herbs
I love spring. I love the mild temperatures and green things popping up everywhere.
If you need to spend extra time out in the garden this spring, this super-easy meal will save time in the kitchen. It can be whipped up quickly with staples in the pantry, as long as you have some fresh herbs on hand.
We love orrcchiette because the little ears fill up with all the ingredients making a perfect bite every time. Here, diced pancetta and peas nestle inside the pasta in a quick cheesy sauce. This recipe comes from Food & Wine magazine.

Tart of the Month - Carrot and Herb Tart
April's tart of the month is not exactly seasonal. Carrots are available year round but at their peak in late summer and fall. But the fresh herbs and ricotta make this tart light and spring-like, and the beautiful, multi-coloured carrots are striking.

Spring Pea Soup
This extremely simple soup is perfect for spring! It is served at room temperature, so you can make it a little in advance and garnish just before serving.
Of course, fresh peas are the best thing ever. But this tasted very sweet and delicious with frozen peas, so you can enjoy a taste of springtime anytime.

CSA - Fresh Veggies Weekly (and Kohlrabi Two Ways)
For the first time ever, we have signed up for a weekly CSA box. CSA stands for community supported agriculture. Local farmers supplement their costs by selling shares in their produce in advance, so you pay upfront for weekly vegetables throughout the season. What you get each week is a surprise, which may be intimidating for some people, but for us it's a fun adventure! It's actually exciting to open the box of veggies each week and see what we get.

Tart of the Month: Asparagus & Gruyere
I have plenty more to tell about our road trip to Nashville, but let's take a break from travel for our tart of the month! This month we're doing asparagus again. We have a small asparagus patch in our garden and due to the cold winter and late spring, it is just starting to produce asparagus now in mid May. Asparagus is one of my favourite vegetables so it gets two months of tarts before spring turns to summer and I suspect the tart of the month will turn from savoury to sweet for a while.

Spring Lamb Chops & Asparagus Ravioli
I like these simple meals that are fancy enough for company but quick enough for a weeknight. This dish just sings spring. Tiny lollipop lamb chops and store-bought asparagus ravioli with fresh asparagus on top. Easy as pie!

Tart of the Month: Spring Asparagus & Goat Cheese Tart
We have an asparagus patch in our garden and it is the greatest. Every year it gives us more and more fresh asparagus in the spring. But not quite yet this year. The asparagus from this tart came from the store but maybe I'll make it again with garden asparagus when it's ready.
This tart also uses spring onions if you can find them. They are the ones with large white bulbs and green stems. Once again, I didn't have any ready yet so I used regular green onions.

Easter Cupcakes
These adorable cupcakes are fun and easy to make. Vanilla cupcakes are frosted with cream cheese icing and dipped in toasted coconut to resemble a bird's nest. Then chocolate mini eggs are added to complete the Easter theme.
Really, you can use any cupcake and frosting to make these, but I like the subtle vanilla flavour of this recipe.
