Chicken & Waffles

The first time I tried chicken and waffles was in Las Vegas and I fell in love.   It seems like an odd combination, but crispy, salty fried chicken with sweet waffles & syrup is a match made in heaven.  

This recipe from Chatelaine magazine lightens the dish up considerably by baking cornflake-crusted chicken breasts and adding corn flavour to the waffles.  I made a few tweaks to the recipe to add even more flavour, but it was a huge success and we'll be having this again.

Slow Cooker Pot Roast

I've made pot roast in the crock pot before and it is still, by far, my most popular post ever.  That version had a lot of liquid, as do most pot roast recipes I've seen.  But this recipe from Martha Stewart has only a few tablespoons of liquid.  I turned it on before work and, to be honest, I worried all day that it would be all dried out when I got home.  But slow cookers are magical things.  Lots of juices came out of the roast and made a lovely jus that kept the meat moist and was delicious over the meat.

Pork Roast with Cider Gravy

I'm really enjoying pork roasts lately.  They are easy to cook and as long as you serve them with a tasty sauce, they're always moist and delicious.  A 1.5 to 2-pound pork roast serves us dinner plus lunch the next day with enough leftovers for another meal, like pork fried rice.  

I roasted this pork in the oven with mushrooms and onions, then made a pan gravy by adding cider, mustard and honey.  Here's what you need:

1 boneless pork loin centre roast
1 tablespoon olive oil
1 large onion, sliced
250g cremini mushrooms, quartered
3/4 cup apple cider or apple juice
1/3 cup Dijon mustard
1/4 cup honey
1/4 tsp ground cardamom and/or nutmeg

Cookies! Oatmeal Chocolate Chip with Figs and Coconut

Although I love to bake, I'm not the worlds biggest fan of eating baked goods.  I can live without most cookies and sweets.  Except oatmeal chocolate chip cookies, which I could eat all day, every day.  I made some delicious ones recently from a Martha Stewart recipe, which I will use again.  They stay moist even the next day, which is ideal in an oatmeal cookie.  

These cookies are from Food52 and they add dried figs and coconut to the mix.  The extra ingredients make the cookies even more moist and chewy, adding a nice texture and making them a little more healthy, perhaps?
