Quarantine Meatballs

When she isn’t being awesome in the kitchen, the Clockwatching Tart actually works for a local health unit, which means she is incredibly busy at the moment. Between that and the ongoing COVID-19 pandemic, cooking has been a bit of a challenge lately. 

One thing that has definitely helped us out has been a delivery service from one of our favourite local restaurants, Grace. Rather than deliver actual meals, Grace has rebranded as Grace Pantry during this time of physical distancing and is using their connections in the food industry to deliver an amazing selection of locally sourced meats, produce and other tasty treats. When I was unpacking our very first order from Grace Pantry, I was blown away by how beautiful the ground pork from Stonecroft Farms looked. I wanted to do something special with it, so I decided to try a variation of my favourite recipe for meatballs from Anne Burrell.

I don’t normally refer to ground pork as “pretty”, but there’s the evidence. For my version of the recipe above, I just omitted the veal, substituted dried parsley for fresh (we are in a pandemic, after all), and used more than a cup of parmigiano (pandemic or not, I like what I like). 


Another interesting note about cooking in the age of a pandemic is the absolutely bonkers number of onions I go through in a week. I suppose it is because I have all the time in the world, so I’m making everything from scratch, which often includes onions in one form or another. Luckily, I love dicing onions. I find it soothing and the OCD part of my brain enjoys the symmetry of the process.


While I love garlic, I wouldn’t call the process of smashing it with the flat blade of a knife soothing, but it is certainly satisfying.

When I have the luxury of time, prep work is my absolute favourite part of cooking. It’s obviously the OCD thing, but having nicely diced ingredients all out in their own little bowls or own their own little plates is a very satisfying feeling.

While the Clockwatching Tart tends to individually weigh her meatballs on a kitchen scale, I opted to just eyeball it and am pretty proud of how they all turned out. I suppose I missed my true calling in meatball forming. C’est la vie.

Apart from quality ingredients, it is how you cook them that really brings out the flavour in these meatballs. Searing each side as best you can in the frying pan before they get finished off in the oven adds so much flavour.

These photos are about two weeks old as I write this post and oddly enough, we had some store bought meatballs for lunch today and I was so disappointed with them that I wanted to throw them out. That is how good these homemade meatballs are in comparison.

Pasta Salad with Prosciutto and Melon


I adore melon and prosciutto together.  Especially now when ripe melons are available at the markets. I also love a good pasta salad - cold pasta with vinaigrette and veggies is one of my favourite meals. 



So I decided to combine these loves in a pasta salad with prosciutto and melon. 



I received a Galia melon in my CSA box.  It's a small green melon that tastes similar to honeydew.  This salad would also be great with cantaloupe.  



I used medium shells for the pasta.  Orecchiette would also be great here.  Any short pasta will do but I like the way the shells mimic the shape of the scoops of melon.



I think this is the first time my melon baller has been used for melon!  You could certainly just dice the melon but I like the little half-balls.



For the dressing, I made a quick white wine vinaigrette right in the pasta pot after cooking and draining the pasta. This made it a one-pot meal, but you can make all the components separately if you prefer.  



I mixed the prosciutto into the salad, but it has a tendency to clump together.  I'd advise adding the proscuitto to each individual salad once it's plated so it keeps it's vibrant colour and stays separate.



The result was a wonderful, cool, refreshing, salad that made a great summer dinner.  I ate it for lunch the next day too and it kept surprisingly well.  

Here's the recipe:

For the salad:
500 grams (1 lb) medium pasta shells, orecchiette, penne or pasta of your choice
1 small Galia melon or half a medium cantaloupe or honeydew melon
1 sprig of basil leaves, sliced if large
1 green onion, thinly sliced
125 grams (1/4 lb) thinly sliced prosciutto
125 grams (1/4 lb) diced or crumbled feta or ricotta salata

For the dressing:
3 tablespoons white wine vinegar
1/2 teaspoon red pepper flakes
1/4 cup olive oil
salt and pepper

Directions:

  1. Cook the pasta according to package directions until al dente.  Drain and rinse under cold water until cool.
  2. Meanwhile, halve the melon, remove the seeds, and use a melon baller to scrape out balls or scoops of melon. Alternatively, peel and dice the melon.
  3. In the empty pasta pot or a large bowl, combine the vinegar and red pepper flakes.  Whisk in oil until combined. Season with salt and pepper to taste. 
  4. Add the pasta to the dressing and toss well to combine.  Gently add the melon, basil and green onion.  
  5. Plate the salad in individual servings and top each serving with torn slices of prosciutto and cheese.  Sprinkle generously with black pepper to serve.

Spring Pasta with Peas and Fresh Herbs


I love spring. I love the mild temperatures and green things popping up everywhere. 

If you need to spend extra time out in the garden this spring, this super-easy meal will save time in the kitchen.  It can be whipped up quickly with staples in the pantry, as long as you have some fresh herbs on hand.  



We love orrcchiette because the little ears fill up with all the ingredients making a perfect bite every time. Here, diced pancetta and peas nestle inside the pasta in a quick cheesy sauce.  This recipe comes from Food & Wine magazine.

Fettuccine Alfredo

Fettuccine Alfredo

When I was a kid, Fettuccine Alfredo was one of my favourite dishes. Any time we went to an Italian restaurant, it was my go-to treat.  Really, the restaurant or bottled version of Alfredo sauce over pasta can make a perfect meal for children picky children - soft, mild and creamy. But this version, made with fresh pasta and piles of freshly grated cheese, is a little more grown up.

This Alfredo sauce recipe comes from the experts at Serious Eats and has a reasonable amount of butter and cheese, but lots of cream.  I used my fresh pasta that I told you about last week for the fettuccine, and it was sublime.

Fresh Pasta


On a snowy Saturday I decided to make fresh pasta for the first time. I received a KitchenAid Pasta Attachment set for my KitchenAid mixer as a Christmas gift and decided to give it a try.

Holiday Round-Up


It's getting to be a busy time of year with everyone rushing about preparing for the holidays.  We're all looking for short cuts to make the season easier, including me!  So here's a round-up of holiday posts that might make life a little easier for you.

First, a couple of simple meals to have in your back pocket for those busy nights where there's just not enough time.


Cacio e Pepe (Cheese & Pepper Pasta)


Unbelievably simple and delicious. You can use spaghetti, linguine or bucatini.  Keep Romano cheese and white pepper on hand and this is a pantry meal for any time.  


Lazy Cabbage Rolls


These take a little more time to make, but you can make several batches to freeze and bake any time for a quick meal.  Seasonal and flavourful, this is great to have on hand for cold winter nights.  

Now, if you're hosting a party or are a guest who needs to bring something, here are some appetizer ideas.

Little Hasselback Potatoes


This potato technique makes an amazing side dish, but it would also be great as an appetizer with a dollop of sour cream and a sprinkle of chives.

Surprisingly simple but incredibly impressive.  These are great as an appetizer, or in place of rolls on a buffet table.  They freeze well too.

Bocconcini Stuffed Meatballs


I happened to have some leftover bocconcini (fresh mozzarella balls, packed in water and often sold in a tub in the deli section of the grocery store), so, of course, I decided to stuff them inside some meatballs to see what would happen.  It turned out pretty great!


I served the meatballs with spaghetti tossed with a quick tomato sauce and sprinkled with fresh basil for a very tasty, decadent meal.

Cincinnati Chili


On our road trip to the Southern USA we stopped in Ohio for Skyline Chili.  This is a Cincinnati specialty where a sweet and spicy chili is served over spaghetti, topped with shredded cheddar cheese and called a 3-way.  Topped with onions and/or beans it's a 4-way or 5-way.  We weren't expecting this semi-fast food to be so tasty!  So when we got home I decided to try to re-create it.

Cheese Tortellini with Brussels Sprouts & Bacon


Although the snow is still on the ground, we've been grilling a little. But I'm still going through the (hopefully) last of my winter recipes while it's cold outside. 

This easy recipe is inspired by Martha Stewart. It wouldn't have occurred to me to add brussels sprouts to pasta but it's a great combination. If you keep some fresh or frozen tortellini on hand, it's simple to whip it up any time.
