Boneless Chicken Thighs in Mustard Orange Sauce


When it's not grilling season I'm sometimes stumped about what to do with boneless chicken thighs.  This easy recipe makes a very delicious change of pace.

Here's what you need for this recipe inspired by Epicurious:  



4 boneless, skinless chicken thighs
1 tablespoon olive oil
3/4 cup orange juice
3/4 cup chicken stock
1/4 cup grainy dijon mustard
1 tablespoon honey
1 teaspoon hot pepper sauce




Sprinkle the chicken with salt and pepper.



Measure 3/4 cup orange juice (fresh squeezed or store-bought)



Add 3/4 cup chicken stock.



Heat the oil in a pan over medium high heat.



Add the chicken.



Brown 5-6 minutes then flip it over and brown another few minutes. 



Pour in the orange juice and stock.  Simmer for about 5 minutes until chicken is cooked through.



Remove the chicken to a plate and keep warm.



Add the mustard, hot sauce and honey to the orange juice mixture in the pan and bring to a boil, whisking to combine.  Simmer about 7 minutes until thick.



Once the sauce has thickened add the chicken back in.



Toss to coat and warm through for about a minute.



Place the chicken on a plate and drizzle with the sauce.



I served this with roasted potatoes and Brussels sprouts.



The sauce is so delicious, spicy and flavourful and the prep really couldn't be easier.  We'll definitely be having this again.
