Watermelon Feta Salad


Don't be scared.  It may seem weird to mix watermelon with savoury feta but the taste is so delicious!  It is sweet, salty and refreshing.  I highly recommend this for lunch or dinner! 



I used a quarter of a medium-sized melon for 2 generous servings.  Remove the skin from the watermelon. 




And chop it up into bite-sized cubes.  



Chop an English cucumber into similar-sized chunks.  Slice about 1/4 of a red onion thinly and throw it in.



Dice some good feta cheese.  I splashed out on Macedonian feta, which is my favourite.  



Drizzle with a little olive oil.



I have a garden full of mint.  Pick (or buy) about a dozen leaves and roll them up into a tube.



Thinly slice them in a chiffonade.


Toss the mint with the rest of the salad and sprinkle with cracked black pepper.


This makes an excellent side dish for grilled chicken or fish.  Colourful and fresh.  Give it a try!
