Simple Prosciutto & Cantaloupe Salad


For the last, lazy days of summer, here's a simple and delicious salad that pairs two of my favourite things: melon and prosciutto.  



Beautiful, ripe summer cantaloupe is amazing with salty prosciutto.  I normally just wrap the prosciutto around the melon and call it a day, but this salad is so much more sophisticated.




The recipe comes from Martha Stewart, but it's pretty simple.  Just lay thin slices of cantaloupe and prosciutto over arugula, sprinkle with some thinly sliced red onion and dress with a simple vinaigrette. 

To make the dressing, mix 1/4 cup white wine vinegar, 1 tablespoon minced shallot, 1/2 teaspoon minced garlic, 1/2 teaspoon dijon mustard, salt and pepper to taste.  Whisk in 1/2 cup of olive oil (or shake it all up in a jar), and add a tablespoon of chopped herbs like parsley and chives.  


Drizzle the dressing over the salad and serve it up.  

This is a striking, delicious salad to serve to company and a great way to use fresh summer melon.
