Little Hasselback Potatoes

I was lucky enough to receive some "Creamer" potatoes to try from The Little Potato Company.

The Baby Boomer variety is a tiny, yellow-fleshed potato that's great for roasting, so I thought I'd turn them into mini hasselback potatoes.

Hasselback potatoes is a Swedish potato recipe where thin slices are cut almost all the way through, but the potatoes stay whole, so you get crispy crackles on top, but have creamy roasted middles.  The best of all potato worlds.

Gnocchi with Broccoli


Gnocchi.  Why didn't I make these sooner?  These little potato dumplings make a hearty main dish or an interesting but simple side dish.  

I fully intend to use my potato ricer to make home made gnocchi in the future, but for now I can pick up a package ready-made at the grocery store and have a meal in minutes.

Cauliflower with Easy Cheese Sauce


I'm still trying to cook locally and seasonally, even as it becomes slightly more difficult as the weather gets cold.  We still have lots of local cauliflower in the market though.  I love to roast it, but this simple cheese sauce really makes steamed cauliflower special.


Normally, I make a cheese sauce starting with a roux (flour cooked in butter), then heat milk and remove from heat and add the cheese.  But this sauce uses corn starch and evaporated milk.  I used 7 year old cheddar (!) and fat free evaporated milk, but you can use the cheese and milk-fat level of your choice.

Curried Couscous with Zucchini


It is zucchini time again!  Last year we grew zucchini in our garden.  As we were warned, the harvest was abundant.  We managed to give some away and use the rest up in muffins, pasta and as a side dish.  Also, you can't beat fried zucchini blossoms!

But, because the plant took up so much space in the garden, we didn't grow zucchini this year.  We've got brussels sprouts growing in their place.  So I had to buy some zucchini for this recipe, but it's a great way to use it.  It is delicious warm or at room temperature.  As a side dish or a vegetarian main course.  Colourful, crunchy and tasty.
