Roasted Halibut
You should be seeing some healthier food around here for the next little while. Healthy eating went a bit off the rails over the holidays but we're back on course!
I want to eat fish more often but there are a lot of obstacles to that goal. I'm picky about the kind of fish I like. My favourite is halibut but it costs the earth! Two small portions of halibut cost more than I've ever paid for steak. But as a special treat, it's worth it.
I decided to roast it with rosemary, lemon, and chili powder.
The halibut had the skin on and I left it on.
I preheated the oven to 450 degrees. In a small baking dish I rubbed the fish with a little olive oil and sprinkled with salt and chili powder.
Then I topped the fish with rosemary sprigs.
Then top with thin slices of lemon and another sprinkle of salt.
Roast for about 10 minutes until the fish is opaque.
The halibut flakes beautifully and comes off the skin easily once cooked.
I served this with some rainbow chard and squash that I'll tell you about another time. Super healthy and delicious!
