Instant Pot Chicken Phở

Instant Pot Chicken Pho

This is one of the best recipes I've made in a long time! It is quick and easy enough for a weeknight, and makes fantastic leftovers. 


Instant Pot Chicken Pho

Usually when I make or order phở it is made with a rich, spicy beef broth, but Phở Gà or Chicken Pho is also very common. The gingery broth is an amazing complement to the chicken.

Using the Instant Pot makes this dish so quick and easy.  I also love the way the pressure cooker makes such a lovely, clear broth.  The most time-consuming part was gathering the spices.

This recipe is adapted from Epicurious. It will serve 6 as a meal.  Leftovers are even better the next day and the broth freezes beautifully. 

Ingredients:
2 tablespoons vegetable oil
2 medium onions, halved
2-inch piece of ginger, sliced, skin on
1 tablespoon coriander seeds
5 cloves
1 cinnamon stick 
3 cardamom pods, smashed
7 bone-in chicken thighs (about 2-3 pounds)
3 tablespoons fish sauce
1 tablespoon sugar
8 cups water
salt and pepper

Toppings:
cilantro
red and/or green chilis, sliced
green onions, sliced
1 lime, sliced into wedges

Directions:
Push the "Saute" button on the Instant Pot. When the pot is hot, add the oil.  Place the onions, cut side down in the pot and add the ginger.  Cook without stirring for 4-5 minutes until charred. 

Add the corriander, cardamom, star anise, cinnamon and cloves.  Stir for 1 minute. Add the chicken, fish sauce, sugar and water.  Place the lid on the Instant Pot and lock it. 

Press the "Manual" button and set the time for 17 minutes at high pressure.  It will take about 30 minutes in total for the soup to come to pressure and cook.  Once done, let the pressure naturally release for 10 minutes, then turn the vent to release remaining pressure.  While pressure is releasing, cook the rice noodles according to package directions. 

Once the pressure is released, remove the chicken to a large bowl. Strain the broth into a large bowl or measuring cup, discarding solids. Skim fat from the top of the broth. Season the broth with salt and pepper to taste. 

Carefully remove the chicken from the bones and discard the skin and bones.  Shred the chicken.

Place noodles and chicken into individual bowls.  Top with hot broth.  Each person can add their own herbs, chilis, lime and green onions to their bowl to their own taste. 

This soup tastes amazing.  You will love it!

Chicken Cauliflower Sheet-Pan Shawarma

Chicken Shawarma with cauliflower

This recipe is totally inauthentic, but it tastes amazing.  Chicken shawarma is one of my favourite take-out meals, but it's not so easy to make at home.   This version gives you the wonderful flavours of chicken shawarma, with a hit of healthy vegetables and an amazing, easy white garlic sauce.  Serving it on mini-naan bread, taco-style, makes it a decadent, delicious one-pan dinner.

The recipe is inspired by this one at Food52, but I've made some changes and added the awesome white sauce.  Roasting the veggies and chicken together on one tray makes this one of the most easy and delicious meals I've made in a long time.

These mini-naan make a perfect serving vessel for the shawarma-flavoured filling, but if you can't find them you can use pita or any other flatbread, warmed until soft.  Or just serve the chicken mixture on its own or over rice.  Just don't forget the sauce!


White Sauce for Shawarma

This white sauce is amazing!  I love this sauce, and I've seen some very complicated recipes for it but this one is so simple, tangy and garlicky, it's perfect with the rich shawarma and naan.

Ingredients:
For the Shawarma
1 medium head cauliflower, cut into florets
1 medium red onion, sliced
3 tablespoons olive oil
1 tablespoon ground cumin
1 tablespoon smoked paprika
1 teaspoon ground coriander 
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1 tablespoon kosher salt 
1/2 tablespoon ground black pepper
6 boneless skinless chicken thighs
6-8 mini naan, pitas or flour tortillas

For the White Sauce
1/2 cup mayonnaise
1/3 cup greek yogurt
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1/4 teaspoon dried dill (optional)
1 teaspoon sugar
1 1/2 tablespoons white vinegar


Directions:
For the Shawarma
Preheat the oven to 425 degrees.  Place the cauliflower and onions in a large bowl and coat with 2 tablespoons of oil. Mix together all the spices, salt and pepper.  Toss half the spice mixture with the cauliflower mixture until it's covered.  Spread the cauliflower mixture on a large sheet pan and roast for 20 minutes.

In the same bowl, coat the chicken thighs with 1 tablespoon oil and the remaining spice mix and let sit at room temperature. 

When the cauliflower has roasted for 20 minutes, remove the pan from the oven and toss the cauliflower. It will have shrunk a bit. Make room on the pan for the chicken thighs and spread them on the pan in a single layer around the cauliflower.  Roast for 20 more minutes, checking halfway through and flipping the chicken and tossing the cauliflower so it doesn't burn.  Some parts of the cauliflower will get quite dark and crispy.  This is good!

Meanwhile make the white sauce. 
Mix all ingredients together until smooth and runny. Taste and adjust seasonings (add more salt or garlic if needed).  Refrigerate until ready to use. 

To assemble:
When the chicken and cauliflower are done, remove the pan from the oven.  Heat naan according to package directions or warm pita or tortillas, or serve over rice.  Pile the chicken mixture on warm bread or rice and drizzle with the white sauce.

Instant Pot Risotto

After months of wanting one, I bought myself an Instant Pot on Amazon Prime Day! 

I've never, ever used a pressure cooker before so I was really eager to give it a try.  

For my first test run, I decided to work with this recipe from Serious Eats for Miso Risotto in a pressure cooker.  I adapted it a bit with the ingredients I had on hand.  And, although the recipe is written for an electric or standard pressure cooker, I didn't find the instructions intuitive for my first time using the Instant Pot. But the results were fantastic.

I would never make risotto the traditional way in the middle of summer.  It just makes the kitchen too darn hot.  But this method makes it very quick and easy, and doesn't heat up the kitchen!

The first thing I learned about the Instant Pot is that the actual cooking time can increase and even double when you add time to preheat and release the steam.  In this case, the risotto was still very quick and worth the effort.

The second thing I learned, which was a big surprise, was that the saute feature gets very hot!  Never having used an electric pressure cooker, I was very surprised how hot it got.  You'd need to keep a close eye on it not to burn your garlic.


Instant Pot Risotto


Ingredients

6 tablespoons olive oil
1 onion, diced
3 cloves garlic, minced
2 cups Arborio rice
3/4 cup dry sake or sherry
1 tablespoon soy sauce
1/4 cup miso paste
4 cups chicken stock (or vegetable stock)
1 teaspoon lemon juice
salt
chives or green onions

Directions for Instant Pot

Have all ingredients measured, prepped and ready to go before turning on the Instant Pot. 

Press the "Saute" button and wait until preheated (less than a minute).  Add the oil, then the onion and saute about 2 minutes until softened. Add the garlic and saute one minute more.  The pot insert will move around, but you can hold on to the edge with a kitchen towel to keep it steady. 

Add the rice and cook, stirring for about 4 minutes until the rice is toasted and coated in oil.

Add the sake or sherry and cook, stirring until mostly dry. Stir in soy sauce and miso paste. 

Add stock.  Make sure all ingredients are submerged and there are no grains of rice or pieces of onion stuck to the sides of the pot, and make sure the rim of the pot is clean.  

Put the lid on the Instant Pot and click it closed.  A little tune will play to indicate it is properly closed. 

Push the "Manual" button. Push the "Pressure" button until the Low Pressure light is on. The timer will default to 30 minutes.  Press the minus - button until the timer says 5 minutes. 

After 10 seconds, the program will start.  It took about 5 minutes to come up to pressure, then the timer started counting down.  Once 5 minutes was up, the pot went into "Keep Warm" mode.  To quick-release the steam, press "Cancel" and turn the steam nozzle to "Vent". Depressurizing took about 2 minutes for this recipe. 

Once the pressure is released, open the lid, being careful to turn your face away from the steam.  Stir the risotto a few times until it thickens.  Add salt to taste if desired.  Mine didn't need it. 

Serve the risotto in shallow bowls, topped with chopped chives or green onions.

Larb! (Laotian Ground Chicken & Rice)


Larb doesn't sound like the most appetizing name for a dish, but this dish is truly fantastic. It's easy, cheap, filling, endlessly customizable and tastes delicious. 



Larb is a traditional dish of Laos, in Southeast Asia.  This version isn't traditional, but it has the qualities of Larb and is so simple. 



All you really need is ground chicken and rice, and any additional veggies you like. The simple sauce is sweet and tart, made with easy-to-find Asian ingredients.  It's awesome. 



Pickled onions add some crunchy tang to the ground meat and rice. 



You can serve the larb over rice or along with rice in boston lettuce leaves.




Either way this dish is a winner.  You can adjust the spice level with more or less chilis, add mushrooms and/or greens, or any other veggies you like.  My favourite addition is water chestnuts - I love the crunchy texture. 

Here's what you need...

Ingredients:
1/2 a medium red onion
2 tablespoons rice vinegar
1 tablespoon vegetable oil
1 lb (around 500g) ground chicken (you can also use ground turkey, pork or beef)
2 cloves garlic, minced
2 small hot peppers, minced 
1 bunch green onions, sliced
4 tablespgroons soy sauce
1 teaspoon fish sauce
1 tablespoon brown sugar
1 tablespoon Sambal Oelek (chili garlic sauce)
Butter or Boston lettuce leaves for serving
Cilantro for serving
Lime wedges for serving

Optional additions:
Finely chopped mushrooms (cooked with the ground chicken)
Chopped greens such as bok choy, kale, or spinach (added with the sauce and wilted)
Chopped water chestnuts 

Directions: 
First steam some rice and make quick pickled onions by thinly slicing half a red onion and soaking it in rice vinegar while everything cooks.

In a large skillet, heat the oil and add the ground chicken, breaking it up and cooking until no longer pink.  Add the garlic chili peppers and white parts of the green onions and continue to cook until the liquid evaporates and the chicken starts to brown. 

Add the soy sauce, fish sauce, brown sugar and sambal oelek, stirring to combine.  Add the green parts of the green onions and any other additions (leafy greens, water chestnuts) and cook until liquid is mostly evaporated. 

Serve over rice, topped with pickled onions, cilantro, and a squeeze of lime.  Even better, serve it all wrapped in lettuce leaves.

Mexican Tortilla Soup

Mexican Tortilla Soup

This is the second time I've made tortilla soup on this blog.  My previous recipe uses tomatoes, but this one has a clear broth flavoured with chipotle peppers in adobo and cilantro.

It starts with a broth made from whole chicken legs, onions and garlic and adds a few beef bones for extra meaty flavour.

While the broth is simmering, fry two whole tortillas and 4 tortillas cut into strips.

After simmering for an hour, the chicken is shredded.  Chipotles, cilantro, onion and crumbled fried tortillas are pureed and added to the broth.

The broth takes on a greenish colour with the puree added in.  The shredded chicken goes back into the soup and I added some corn as well.

Once the soup is warmed through, place the garnishes in the bowl - avocado, chopped cilantro and shredded cheese.


Tortilla Soup

Ladle the hot soup over the garnishes and top with fried tortilla strips. 

This soup is slightly spicy, hearty and warming. It makes a fantastic winter dinner. 

Here's the recipe, adapted slightly from Mark Bittman's Tortilla Soup recipe in the New York Times. 

Ingredients:
4 large chicken legs
2 meaty beef bones (optional)
1 medium onion, skin on, quartered
1 whole head garlic, halved, skin on
1/4 cup vegetable oil
6 corn tortillas
2 chipotles in adobo
1/2 cup chopped cilantro
salt
1 cup frozen corn (optional)
shredded cheese
diced avocado

Directions:

Place chicken legs, beef bones, garlic and 3/4 of onion in a large pot. Cover with water, about 10 cups. 

Bring to a boil, then reduce to a low simmer.  Cook for about an hour. 

Strain the broth through a fine sieve lined with cheesecloth or a coffee filter.  Set chicken aside to cool.  At this point you can also chill the broth to let the fat rise to the surface. 

Meanwhile, slice 4 tortillas into strips. Heat oil in a pan and cook 2 whole tortillas until light brown and crisp, about 1 minute per side. Remove tortillas and drain on paper towels.  Add tortilla strips to oil in pan and toss until brown and crisp, about 2-3 minutes. Drain strips on paper towels. 

Add the chipotles, 1/4 cup cilantro, the remaining 1/4 onion and a teaspoon of salt to a blender.  Crumble in the two whole, fried tortillas and add 2 cups of the broth.  Puree until smooth.

Remove the chicken from the bones and shred the meat. 

When ready to serve, skim the fat from the chicken broth and pour into a pot to reheat.  Add the chipotle mixture and bring to a boil.  Simmer for 10 minutes. 

Add the corn and chicken and bring back to a simmer to warm through.  Season with salt to taste. 

Add avocado, cheese and cilantro to serving bowls and pour soup over top.  Sprinkle fried tortilla strips over the top and add more cheese if desired.

Quick & Easy Pho


Pho is one of my favourite winter comfort foods.  It is widely available and pretty cheap to get a bowl of pho in most places these days.  My medium-sized city has dozens of pho restaurants that sell a huge, steaming bowl of beef, noodles and broth for $8 or less.

But sometimes - like this weekend - it is just too cold to go outside. We've had a huge snowfall in the past few days, so making pho at home is a warming treat.



Pho broth is usually made with beef bones cooked with charred onions, ginger and spices. Serious Eats' The Food Lab has a great tutorial for traditional pho.  I highly recommend checking it out, whether to make the recipe or read an interesting history of the dish.



But I've rarely got oxtail on hand, or the time to boil bones all day.  So this quicky shortcut using store-bought beef broth is a makes home made pho a weeknight meal.  It also adds in mushrooms and greens which, while not traditional, make an even heartier, healthier meal.  This recipe is inspired by Epicurious Detox Pho.

Here's what you need for this tasty soup.  You could double the broth and freeze it for a winter treat any time.

For a while now I've been reading about gochujang, a spicy, fermented Korean chili paste, and I wanted to try it but I haven't been able to find it in my grocery store.

I finally came across some at my local Asian market and I'm so glad I did!  It really shines in this quick and easy stew.

I found this in plastic tubs in the Japanese section of the store.  There's not really anything I'd recommend as a replacement so try to track it down if you want to make this spicy stew.

Spring Pasta with Peas and Fresh Herbs


I love spring. I love the mild temperatures and green things popping up everywhere. 

If you need to spend extra time out in the garden this spring, this super-easy meal will save time in the kitchen.  It can be whipped up quickly with staples in the pantry, as long as you have some fresh herbs on hand.  



We love orrcchiette because the little ears fill up with all the ingredients making a perfect bite every time. Here, diced pancetta and peas nestle inside the pasta in a quick cheesy sauce.  This recipe comes from Food & Wine magazine.

Potato & Cheese Frittata


I rarely make eggs for dinner but every time I do I wonder why I don't do it more often. 

A frittata is very simple to make. You just cook your fillings and add eggs, then bake in the oven until set.

Pork with Roasted Tomatillo Sauce


In the spring we planted four tomatillo plants in our garden.  Tomatillos are in the nightshade family, related to tomatoes.  I haven't had much luck with tomatoes in my garden, so I wasn't expecting much.  


But our tomatillo harvest has far exceeded expectations!  In August we harvested twelve pounds of tomatillos, and we have plenty more still growing.
