Curried Chicken Croquettes


These little croquettes are packed with flavour.  They contain green curry paste, which doesn't give them a strong curry flavour.  If you think you don't like curry, give these a try.  

Here's what you need:



1 pound ground chicken 
2/3 cup panko (Japanese breadcrumbs)
3 green onions
2 tablespoons mayonnaise
1 1/2 tablespoons green curry paste
1 tablespoon dark sesame oil
1 tablespoon soy sauce
2 teaspoons sambal oelek (ground fresh chile paste)
1 teaspoon kosher salt
1 teaspoon grated peeled fresh ginger
1 large egg
2 tablespoons oil for frying (I used grapeseed oil but you can use olive, peanut or canola)


In a large bowl combine the chicken and panko. Slice the green onions and add them as well.


In a smaller bowl, combine the mayonnaise, green curry paste, dark sesame oil, soy sauce, sambal oelek, salt, ginger and egg.  Stir together and mix it in to the chicken.


Gently mix all the ingredients together with your hands, and form it into twelve little patties.


Heat a tablespoon of oil in a large skillet.  Cook six patties at a time, about 3-4 minutes per side until browned and cooked through.


Remove to a plate to keep warm and heat the remaining tablespoon of oil and cook the remaining patties.  


I served this with sweet & spicy slaw.  


These were great for dinner and fantastic reheated for lunch the next day.  Simple, flavourful and pretty healthy.
